Zardoluatola — Apricot Soup

A traditional Pamir dish made from dried apricots: Zardoluatola, or apricot soup.

Zardoluatola (Apricot soup) is one of the unique Pamir dishes. It is made from dried apricot and does not harm either the stomach or health.

Preparation

  1. Soak a well-washed dried apricot for a while.

  2. Then cook it for about 20 minutes.

  3. After the apricot has softened, remove its seeds.

  4. While the apricot is boiling, dilute the flour in cold boiled water until smooth.

  5. Then, gently pouring the floury water into the apricot liquid and mixing well, bring the contents to readiness — until they reach a mushy consistency.

  6. “Zardoluatola” (Apricot soup) is ready.
