Qurutob

A traditional Pamir dish made with qurut, bread, onion, and greenery.

Spring is a time for eating Sumanak, Shakarob, and Qurutob. Some people even say that if they do not eat these meals in spring, their year becomes unlucky. Do not be afraid if you do not have a cook among your friends: after watching this video, you will be able to prepare Qurutob by yourself.

Ingredients

  • qurut (qrut, qorot, qurt) — a fermented milk product, or dry cheese;
  • bread;
  • onion — 4 pieces;
  • greenery — a bunch.

Cooking method

  1. Soak the qurut in warm water for 1 hour, in a ratio of 400 g of qurut to 1 litre of water. If qurut is very hard, boil it over low heat for 30 minutes.
  2. Slice and roast the onion.
  1. Filter the water in which the qurut was soaked and boil it. Add salt to taste.
  1. Crush the bread into pieces in a deep dish.
  1. Pour the boiled qurut water over the bread and leave it for 5 minutes.
  1. Lay the roasted onion over the swollen bread.
  1. Sprinkle with greenery.
  2. Qurutob is ready. Enjoy your meal!
